PRODUCER PROFILE: Myron has been crafting cheese for over 40 years and is the manager of Chalet Cheese Cooperative. The cooperative is celebrating 125 years of business in 2010. Myron is a Wisconsin Master Cheesemaker, certified in Limburger, Baby Swiss and Brick cheeses. All of these cheeses have won him numerous excellence awards. "There are still plenty of people who appreciate a full-flavored cheese," he says.
PRODUCTS: Only producer of Limburger Cheese in the entire United States. Limburger is a surface-ripened cheese that originated in Belgium. It is made at Chalet the old-fashioned, labor-intensive way—as it has been for more than 60 years. Once formed, the individual pieces of cheese, which are the shape and size of small bricks, are laid side-by-side on specially cured pine boards. Chalet Cheese also produces Brick, Swiss, Baby Swiss Cheese, and Leiderkranz - a slightly less pungent cousin of Limburger.

PRODUCER PROFILE: Edelweiss Creamery exists in a plant that has been in the same location since 1873. Master Cheesemaker, Bruce Workman, began renovating this plant in 2003 to fulfill a lifelong dream. Edelweiss Creamery is now a state-of-the-art small artisan cheese factory. Bruce literally imported the equipment from an entire Swiss cheese plant, including the traditional copper Kettle to begin producing classic big-wheel Emmentaler Swiss wheels.
Mid-2006, Bruce joined forces with Edelweiss Graziers Co-Op (www.edelweissgraziers.com) to create exciting, new specialty grass-based cheeses. With the help of Bruce and Jeff Wideman, another Wisconsin Master Cheesemaker, experimental cheeses were made utilizing the grass-based milk. Ultimately, these cheeses would be known as Grass-Based Aged Gouda and Grass-Based Aged Cheddar.
Consumers can be proud that their cheese is coming from a farming system that is sustainable, both environmentally and economically. The farms are family owned and operated contributing greatly to their local economies. From a health perspective, grass-based cheeses contain no rBST, are high in Omega 3 and CLA, valuable in cancer prevention.

PRODUCER PROFILE: Jeff Wideman grew up on a dairy farm and went to work for the dairy cooperative where his parents were farmer patrons. It was there, under the tutelage of two Swiss cheesemakers that his career began. In 1981, he took over the Maple Leaf Cheese Cooperative to make innovative, premium cheeses. Jeff is also a Wisconsin Master Cheesemaker with certifications in Monterey Jack and Cheddar cheese. Jeff is one of two WI Master Cheesemakers here at Maple Leaf. Paul Reigle came to Maple Leaf in 1983 and quickly knew that he had found his passion. Paul has WI Master Cheesemaker certifications in Yogurt, Monterey Jack and Gouda cheese.
PRODUCTS: Cheddar (including Cranberry, Blueberry, White and Naturally Smoked), Colby, Monterey Jack (including varieties flavored with Jalapeno, Habanero, Salsa and Chipotle), Edam, Gouda (including Naturally Smoked) and Yogurt Cheese.
